GENERAL MANAGER TOM MASTRICOLA
General Manager Tom Mastricola brings with him over 20 years of experience in restaurant and bar
management, as well as firsthand knowledge of the culinary world –acquired from
several years working as a sous chef. Excited to join such an acclaimed fine
dining establishment, Mastricola states, “Arterra has raised the bar for fine
dining in San Diego, and I am thrilled to be a part of such a phenomenal team. I
plan to help continue the tradition of excellence with which Arterra has become
synonymous.”
Mastricola comes to the Arterra team with over 12 years experience in the restaurant arena. He began his career in the restaurant industry in 1994 as the sous chef for Roadtrip restaurant, specializing in American cuisine and located in Boston, Massachusetts. After leaving Roadtrip in 1995, Mastricola further honed his culinary skills as sous chef at Uva in Brookline, Massachusetts. There he assisted in the development of the menu and nightly specials, and was also responsible for management of the kitchen, including food and labor costs. After moving on from Uva in 1997, Mastricola continued to round out his restaurant repertoire, serving as bartender for another Boston restaurant, The Vault.
In June 1998, Mastricola further honed his skills in management and operations as the Bar/Floor Manager for #9 Park, a four-star, fine dining French-Italian restaurant in Boston. Mastricola’s growing expertise and penchant for crafting cocktails, as well as his passion for fine spirits was also further developed. At #9 Park, Mastricola was responsible for hiring new staff, bartender education and training, supervising the bar/service staff, inventory and liquor ordering. Mastricola also gained experience working with event planning; he was in charge of coordinating all private functions, as well as overseeing wine and beer dinners. #9 Park’s drink menu, developed by Mastricola, won numerous beverage awards from publications such as American Airlines Magazine, Boston Herald, Boston Globe, Boston Magazine and In Style.
In October 2001, Mastricola left #9 Park to take the position of Beverage Manager at Fifty Seven Restaurant, also in Boston. Mastricola successfully developed an award-winning 250-bottle wine list, which gained acclaim from Wine Spectator. Mastricola’s award-winning drink menu at Fifty-Seven Restaurant earned rave reviews from the Boston Globe, Boston Magazine and the Improper Bostonian. Before leaving his hometown of Boston, Mastricola was the General Manager for Kings from December 2002 to November 2004, a 100-seat American restaurant with 3 bars, 16 bowling lanes and a total capacity of 560 guests. Once again, Mastricola developed successful wine and drink menus at Kings, as well as oversaw all personnel related matters. In February 2006, Mastricola headed to La Jolla, California where he took the position of General Manager at Jack’s La Jolla. Mastricola oversaw the 17,000-square foot facility, which housed three individual restaurants.
In September 2006, Mastricola accepted the position of General Manger at the San Diego Marriott Del Mar’s renowned restaurant, Arterra. At Arterra, Mastricola is responsible for managing the 83 seat dining room, private Vintage Room, bar and lounge, overseeing the staff, and coordinating special food and wine events. “Tom is a great addition to our staff here at Arterra. He brings to us a phenomenal background in beverage development, as well as hospitality management and leadership; both of which will not only help continue the success we have seen at our restaurant, but also help bring Arterra to that next level,” stated Marriott Hotel Assistant General Manager Joe Emma.
